I think she was more afraid of the villate-turned-bandits. The horse was fine, it didn't need to eat or defecate, and most important of all it couldn't breed like goblins. It was harmless except for its rather big size.
let's look at this logically, if they are traveling with that much money then that means they have some powerful backing, something to use as an invisible shield. why would they not realize that? obviously they wouldn't think he's a godlike dragon but at the very least with that amount of money he's a high ranking noble or even a part of the royal family...

Backers wouldn't help if they were to be killed and buried god knows where. You also wouldn't assume someone died if they go missing for a few days as well. Hell even if they murdered the prince in this scenario like wtf would the King ACTUALLY be able to do in this pseudo-medieval world? He could probably trace it back the latest sightings of him, but it's not like they would know if the villagers were even guilty of his disappearance or not. Of course, the king could just call it a day and raze the village and salt the fields, or maybe they pull out some magic bullshit and trace it all back. So you're not entirely wrong, but robbing some rich dudes probably isn't as complicated if you put some thought into it.
How corny. Oh well. In the good spirit of criminal minds, this probably isn’t the first time they’ve resorted to robbery, it’s just the first time they’ve been outgunned.
