Also, that's not my only criticism of Yuri, but that's what got the ball rolling, so to say.
Really, my criticism is that it's usually kinda forced, especially when at certain times it feels like the author has thrown in the character for the purpose of fanservice and drama and nothing more, and it doesn't speak to anything about their character or develop them in an interesting way. Instead we get the stereotypical "crazy psycho lesbian" that is a yandere for FMC or idolizes another girl instead of actually loving her in a romantic or healthy way that only exists to conflict with MC for the sake of love triangle.
If I were to cite a yuri ship that I think does it well, I'd probably say that Yutaka from
Pashiri na Boku to Koisuru Banchou-san is a good character in that she is proactive but not annoying, and actively is not just there to create drama but to help the main character progress in his struggles so she can find parallels in her own issues. She's the rational, level-headed member of the group and so infers what every misunderstanding is instantly and generally helps people with their problems, which means her conflict is mostly internal and is much more interesting than what you usually get from mangas, which just insert a girl that has no background and is obsessed with the main girl for no reason. (I see you, Komi-san...)
Matsuri, her crush, I have issues with narratively, but Yutaka makes up for it mostly.
Also I do have my criticisms of how the writing in the last two seasons of Rick and Morty has gone downhill, but that's neither here nor there
