@Spitzer Thanks for the tip. I do wonder though, does that still hold true if it's surrounded by rice, like it is in an onigiri? I think a big part of your tip is that your mom uses panko rather than the usual batter, too-- which is a fine choice, I'm not dissing your mom's cooking! I would never ever criticize a mom's cooking.
Anyway, who am I kidding, most of my tenmusu is still going to come from Japanese markets, so they're always going to be soggy...
