Is it important to point out the bandits are kind of strong?

Well, I suppose it establishes why the escort team was overwhelmed by bandits despite being there specifically to guard against bandits (I assume). The other less favorable explanation would be incompetence/weakness on their part.

Alternatively, Master (the MC) mentioned that the bad guy's strength was more like a mercenary's than a bandit's, which might be foreshadowing that they weren't actually bandits but were hired by somebody to disrupt the trade route or steal those high quality ingredients right before the cooking competition or something.
