Haaaahh!!??!! I swear curds cannot be in anyway be summed up in that way. They are so far removed from cheese as dairy products go it’s almost incredible. Their taste usually ranges from sour to sweet depending on how much sugar and whatnot was added as well as usually being dried for easier storage and consumption as they had no efficient way of preventing dairy from spoiling. They can be extremely hard(literally like biting a piece of stone) to eat(in which case they are usually left in warm water to soak before eating) or soft and crumbly depending on the process before the drying. They have in no way a cheesy taste or texture at any point of the process.
